Stuffed Brinjal / Baingan is one the most craved for and mouth watering recipe made mostly in North Indian Region. Brinjal also known as eggplant or Gutti Vankaya and Baingan in Hindi is a vegetable which is somewhat round/ oval in shape. In this recipe we are going to stuff it with some Indian spices combined together which gives it an amazing aroma. Since it is neither deep fried or include to much oil hence it is good for health and is mostly served with some chapattis/ roti. Hope you all will like this recipe and will try it at your home.   • Fennel Seed: 2 Tablespoon
  • Cumin Seed: 1 Teaspoon
  • Carom Seed: 1 Teaspoon
  • Fenugreek Seed: 1 Teaspoon
  • Nigella Seed: 1 Tablespoon
  • Turmeric Powder: 1/4 Teaspoon
  • Red Chilli Powder: 1/2 Teaspoon
  • Coriander Powder: 2 Teaspoon
  • Asafoetida: 1/4 Teaspoon
  • Salt to taste
  • 2 Onion
  • 10 to 12 Garlic Cloves
  • 1 inch Ginger
  • Green Chilli: 2
  • Mustard Oil
  • Mango Powder: 1 Teaspoon
  • Brinjal: 10 to 12


Step 1

Take Fennel Seed, Cumin Seed, Carom Seed, Fenugreek Seed and Nigella Seed in a pan. Roast them for about 2 minutes on medium flame by continuously stirring them.

Step 2

Now grind these spices along with turmeric powder, red chilli powder, Coriander Powder, Asafoetida and salt in a grinder to make a fine powder.

Step 3

Now take onion, ginger, garlic and green chilli. Make a fine paste of it without using water.

Step 4

Now take a pan. Add some mustard oil. Heat it.

Step 5

Add the onion, ginger, garlic and green chilli paste to it and soute it until the water in it is dried.

Step 6

Close the flame and let it cool for 4 to 5 minutes after which add the powder which we made earlier to it.

Step 7

Also add mango powder. Mix everything well. Stuffing for Brinjal / Bharwan Baingan is ready. Let it cool completely.

Step 8

Now take around 500 gm Brinjal. Wash them thoroughly.

Step 9

Now cut the brinjal from bottom but do not separate it. Stuffing will be filled in this space made through slicing.

Step 10

Now stuff the Stuffing which we have made in between the brinjals tightly.

Step 11

Now take 2 to 3 teaspoon of mustard oil in a pan. Heat it well on low-medium flame.

Step 12

Now fry these brinjals in the pan for about 15 minutes by rotating them after each 2-3 minutes so that it is cooked from all sides.

Step 13

Bharwan Baingan / Stuffed Masala Brinjals are ready to be served. Enjoy.
