Ingredients

  • Cauliflower: 1
  • Carrot: 500 gm ( 6 to 7 )
  • Mustard Seed ( Yellow) : 2 Tablespoon - 17 gm
  • Black Nigella Seeds ( Mangrel ) : 1 Teaspoon
  • Ajwain: 1 Tablespoon - 7 gm
  • Fenugreek ( Methi ): 2 Teaspoon - 8 gm
  • Fennel Seed: 1 Tablespoon -7 gm
  • Coriander Powder: 2 Tablespoon - 10 gm
  • Turmeric: 1 Tablespoon - 7 gm
  • Salt: 1+1/2 Tablespoon - 25 gm
  • Oil
  • Red Chilli Powder: 1+1/2 Teaspoon
  • Hing: 1/4 Teaspoon
  • Mango Powder: 1 Tablespoon - 7 gm
  • Green Chilli: 250 gram

Method

Step 1

Take Cauliflower and carrot. Cut them into small pieces and slices.

Step 2

Boil them in water. Put them in boiling water and then again wait for water to boil. Take them out instantly when water starts to boil.

Step 3

Dry both of them in Sun for 1 full day.

Step 4

After that, boil mustard oil and cool it.

Step 5

Roast all the dry Masala for 1 minute on low flame.

Step 6

Grind all the dry Masale, green chilli, ginger, garlic and coriander powder without adding any water.

Step 7

Now add some green chilli to semi dry cauliflower and carrot.

Step 8

Add grinded Masala, Hing, Mango Powder, Red Chilli Powder, Turmeric, Salt and Mustard oil.

Step 9

Mix them all well.

Step 10

Keep this pickle in a air tight water free Jar and Enjoy your Pickle.
