Ever wonder how these cakes are made. Mouthwatering and delicious cakes are not easy to bake. Decorating them with whip cream icing is yet another task which is not possible if you have not done baking course. But today in this recipe you will learn how to bake a perfect cake base and then decorate it with icing and sugar crunch to make a bakery style butterscotch cake at home. Not only you will find the written recipe but you have watch the video recipe of the same which will clearly demonstrate each and every process which will help you make the same cake on your own at your home place for your loved ones.   • Refined Oil: 1/4 Cup
  • Condensed Milk: 1/3
  • Butterscotch Essence: 1/2 Teaspoon
  • All Purpose Flour: 1 Cup
  • Baking Powder: 1 Teaspoon
  • Baking Soda: 1/2 Teaspoon
  • Milk: 1/2 Cup
  • Vinegar: 1 Tablespoon
  • Sugar: 1 Cup
  • Cashew: 8 to 10
  • Butter: 3 Tablespoon
  • Fresh Cream: 1/2 Cup
  • Heavy Whip Cream: 1.5 Cup
  • Lemon Yellow Color: Few Drops


Step 1

Preheat the oven / Pot for 5 minutes at 180 degree / on medium flame.

Step 2

Grease the cake tin with refined oil and dust it using all purpose flour or use butter paper to place it at the base of the cake tin so that the cake base does not stick to the base of the tin. Tin should be of 1 pound size, i.e. 8 inch.

Step 3

For Cake Base: Take a bowl. Add refined oil 1/4 cup, condensed milk 1/3 cup and butterscotch essence 1/2 teaspoon. Mix well.

Step 4

Now add 1 Cup all purpose flour, baking soda and baking powder to it. Again mix well.

Step 5

Keep adding milk around 1/2 cup needed to make a consistent thick batter.

Step 6

Add 1 tablespoon Vinegar to the batter. This is used to make cake base soft and spongy. Mix well.

Step 7

Now pour the cake batter into the cake tin and tap it well to remove any air pockets in between the batter.

Step 8

Now bake this cake batter in pot on medium flame by covering the pot for around 35 to 40 minutes. You can also bake it in the microwave convection mode or oven at 180 degree for around 35 to 40 minutes.

Step 9

Once baked after around 40 minutes, check the cake base with stick/ knife whether baked properly or not. If baked, Take out the cake tin and cover the cake tin using kitchen towel or any other clean cloth for 20 minutes until cake is cooled.

Step 10

After 20 minutes, take out the cake base from cake tin using knife. Cake base is ready. Keep it aside and now let us prepare butterscotch crunch.

Step 11

For butterscotch crunch: Take 1/2 cup sugar in a pan. Let the sugar melt. Stir constantly.

Step 12

Now add 1 tbsp butter and some chopped cashew. Keep stirring.

Step 13

Once everything is mixed well, pour the mixture on a plate greased with oil. Let the poured mixture cool for around 1 hour after which it will be solid piece of butterscotch crunch. You have to grind it roughly or break it into small pieces using hand. Your butterscotch crunch is ready.

Step 14

For butterscotch sauce: Take 1/2 cup sugar in a pan. Let it melt. Keep stirring. Add butter 2 tbsp. Also add 1/2 cup fresh cream. Mix everything well and once mixed close the flame. Butterscotch sauce is ready. Let it cool.

Step 15

Now to decorate the cake base, use heavy whip cream, whip it well and start the cake decoration. You can decorate the cake as per your choice or as i have shown in the video above. Use butterscotch crunch and sauce to decorate the cake and give it butterscotch flavour. Once decorated butterscotch cake is ready to be served. For better taste keep the cake in refrigerator for at least 2 hours before serving.
